A trio of the most-loved bottled cocktails from the Dishoom Permit Room, forming a covetable cocktail gift set, inclusive of:– the Permit Room Old-Fashioned, Sonia's Negroni and the India Gimlet.
Since 1949, and to this very day, Bombay has been under a state of prohibition. A personal permit is required by law if one is to “continue to require foreign liquor and country liquor for preservation and maintenance of one’s health.” Set apart from a family room, there is a special place which has come to be known unofficially as a Permit Room. Herein liquor can be sold and imbibed, but only for the goodness of one’s health.
Permit Room Old Fashioned:– A bottle-aged muddle of Woodford Reserve bourbon, bayleaf reduction, green tea and so on. Like an old club-room, with tertiary colours and artistic composition.
Sonia's Negroni:– A nod to the Italian lady. Equal parts of London dry gin, bitter Campari and Dishoom vermouth (macerated with vanilla, cinnamon and ginger). Bottle-aged for smooth, tawny intensity.
India Gimlet:– Originally devised for sailors to evade scurvy. London dry gin is shaken with Rose’s lime and a touch of celery bitters. Very easy-drinking.

Permit Room Old-Fashioned
Enjoy at room temperature, neat or on the rocks; if the latter, use plenty of ice for slow dilution. Garnish with a bayleaf and black olive.

Sonia's Negroni
Pour over ice into a frozen rocks glass, with a twist of orange. The first strong taste will be mellowed by the melting ice.

India Gimlet
Place into the freezer, along with two coupe or martini glasses, for 30 minutes. Pour into the chilled glasses and garnish with a carefully balanced dill sprig or lime twist.
